Summer CSA week 3
This week started with sunshine and gave way to rain. The garden is happy with all the moisture but the low temperatures and cloudy skies have slowed growth in many of the heat loving varieties. I am so glad I kept my spring veggies bed going and didn’t turn it over! This week will be another with those limited time spring goodies- enjoy them while they last :) I am almost finished planting our flower beds for the season and am so excited to have you all come and pick some as a thank you for your CSA participation. In addition to the typical flower rows, this year I’ve been honored to plant a special row of flowers for my cousin’s wedding this fall. The bees will be especially happy with the addition of another row!
We’ve been especially busy this week as we’ve had our own planting and tending paired with helping out the Duncan family at their rhubarb farm in Black Forest. Their pick your own sale is this Saturday 8:30-11am. We will be supporting them with their business over the next 2 to 3 years as they transition out of the business and we move their plants to our location. Feel free to stop by the Rhubarb Harvest Festival on Saturday and pick your own GIANT stocks of rhubarb. Quantities are limited and it is a very popular event, so show up early if you’d like to grab some! Their website is here.
Wish us luck on our daughter’s first dairy goat show tomorrow evening. If you are looking for something to do, Douglas County is hosting it’s 4-H June Show Friday and Saturday. There will be kids there showing their cows, pigs, goats and sheep. Details are in the photo on the right. We will let you know how it goes!
This Week’s Produce and Recipes
CSA Bags Will Contain a Mix of the Following Items
Salad Mix
Buttercrunch Leaf Lettuce, Ruby Orach, Mizuna Mustard Greens
Arugula
Strawberry Arugula Salad
New Zealand Spinach
Here is a website with several recipes for this tasty green rich in antioxidants, vitamins A, C and K, magnesium, iron and calcium.
Cherry Bell Radish
My kiddos love these raw with a little olive oil and salt!
Pea Shoots
Easily one of my favorite spring greens, pea shoots taste like sweet peas and can be used as a salad topper, a garnish for avocado toast (or anything else), or can be added into a stir fry.
Sorrell
Lemony spring green. I love to add it into salads, make it into pesto, or just snack on it!
Baby Kale
More tender and less “kale flavored” than full grown kale. I love using it in salads with lemon dressing. Try it in a quinoa salad recipe like this.
Victoria Rhubarb
With it’s green stocks, this variety is as unique looking as it is tasty. We made a strawberry rhubarb sauce for our French toast this morning and with was excellent!
